This super simple delicious Bircher Brekkie Bowl is prepared the night before so you can enjoy an extra 5 minute sleep in!
Bircher
100 g (3 ½ oz/ ¾ cup) oats(oatmeal)
¼ teaspoon ground cinnamon
1 ½ red apples, peeled and grated
zest of ½ lemon
250 ml (8. fl oz/1 cup) of milk (any kind)
½ tablespoon maple syrup or honey
Blackberry compote
175 g (6 oz/ ¾ cup) blackberries
2 tablespoons water
½ tablespoon maple syrup or honey
Topping
seasonal fruit slices
- Put all the ingredients for the Bircher in a bowl and mix thoroughly.
- Cover and place in the fridge overnight.
- To make the blackberry compote, put all the ingredients in a pan over a medium heat and cook until the blackberries are soft but have not lost their shape.
- Serve the compote on top of the Bircher, with fresh slices of apple or any other fruit you desire!
