Breads and Loaves – Zucchini & Date Loaf and Banana Bread

These delicious snacks can be eaten straight from the oven, at room temperature, cold or from the toaster!

 Zucchini and Date Loaf

• 3 cups (lightly packed) grated zucchini

• 3 eggs

• 1 cup olive oil

• 1 tsp vanilla extract

• 3½ cups flour

• 1½ cups sugar

• 2 tsp baking soda

• 1 tsp baking powder

• 1 tsp salt

• 1 tbsp cinnamon

• 1 cup chopped dates

• ? cup chocolate chips, optional

Preheat oven 180 degrees . Prepare two 1.5 L loaf pans by lining with baking paper or greasing well.

In a large bowl, combine zucchini, eggs, oil and vanilla.

In a separate bowl, whisk together flour, sugar, baking soda, baking powder, salt and cinnamon.

Add to zucchini mixture and stir until just incorporated – don’t over mix or the loaves will be tough. Gently fold in dates and chocolate chips.

Divide batter between two loaf pans. Bake for about 60 minutes, or until top is golden brown and springs back when gently pressed in the centre (a toothpick tester will come out with just a few moist crumbs attached).

 

Banana Bread

We all have our own recipes and variations of banana bread. Here is a simple recipe. You may like to add nuts and seeds, a few frozen berries or some dates…it’s entirely up to you!

• 265g (1 3/4 cups) self-raising flour

• 40g (1/4 cup) plain flour

• 1 tsp ground cinnamon

• 140g (2/3 cup, firmly packed) brown sugar

• 125ml (1/2 cup) milk

• 2 eggs, lightly whisked

• 50g butter, melted, cooled

• 2 overripe medium bananas, mashed

Preheat oven to 180°C. Lightly grease a 11 x 21cm (base measurement) loaf pan. Line the base and 2 opposite sides with non-stick baking paper, allowing it to overhang.

Sift the combined flours and cinnamon into a large bowl. Stir in the sugar and make a well in the centre.

In a separate bowl, place the milk, eggs, melted butter and banana and stir until well combined.

Add the banana mixture to the flour mixture and stir until just combined. Do not over mix.

Spoon the mixture into the prepared pan and smooth the surface.

Bake in preheated oven for 45-50 minutes or until a skewer inserted into the centre comes out clean.
